Food Services Pays

financial burdens of
self-sufficiency and rents have
created new responsibilities
and problems.

As a state auxiliary
enterprise, Food Services paid
a rent last year of $78,000 to
Newcomb Hall for the
operation of the two cafeterias
and the Grill. The service also
paid about $19,000 in rent to
University Hospital for the
snack bar it runs there.

Food Services was also
required to pay Housing for
the construction of the Castle
grill in the basement of
Bonnycastle House, which it
now owns. The Glass Hat, built
on loans from the
Endowment Fund, is the
property of the organization,
too. In all, the division has
$125,000 in rent obligations
each year, obligations which
add that much more to its
costs.

Almost half of its other
yearly expenses are spent on
salaries and employee benefits,
with another 40 per cent taken
for supply and food
purchasing. The remaining
expenses include
administration, maintenance,
utilities, and replacement of
equipment.
